Red Velvet Cake

The restaurants in France increased the prices so much during this Valentine's weekend that I asked my sweetheart to buy tickets for a concert instead of a dinner. I love cooking and for the same money as the cheapest menu in a restaurant, I managed to cook a full dinner, using ingredients I usually don't buy (saffron <3). Red Velvet Cake was the dessert but this cake is so heavy that I really recommend eating only one piece of it! We ate two pieces yesterday and today we were listening to Beethoven without breakfast, cause it's really satisfying! Once you are done eating it, don't hesitate to share with your friends and your family! :) Or if not, you can prepare delicious cake balls with the leftovers!

The recipe is from Bakerella's website but I had to modify it quite a lot (too much sugar and butter IMO) :O

Składniki:/Ingredients:
- 2,5 szklanki mąki/ 2.5 cups flour
- 1 szklanka cukru (w oryginale 2!)/1 cup sugar (2 in the original recipe)
- 1 łyżka kakao/1 tbsp cocoa
- łyżeczka proszku do pieczenia/1 teaspoon baking soda
- 2 jajka/ 2 eggs
- 1 szklanka maślanki (dałam kefir, bo nie znalazłam maślanki, ciasto miało bardzo ciekawy smak)/ 1 cup buttermilk (I used fermentated milk cause I couldn't find buttermilk, it gave the cake a very interesting taste)
- 1,5 szklanki oleju/1.5 cups oil
- 1 łyżka octu/ 1 tbsp vinegar
- łyżeczka ekstraktu z wanilii/ 1 teaspoon vanilla extract
- czerwony barwnik/ red food coloring

Krem/ frosting:- 300 g serka typu philadelphia/ 300 g cream cheese- 150 g miękkiego masła/ 150 g soft butter- 1,5 szklanki cukru pudru/ 1.5 cups icing sugar

Trzepaczką lekko ubijamy jajka, następnie dodajemy resztę mokrych składników (jajka, maślankę, olej i ocet) i mieszamy. W drugiej misce mieszamy suche składniki. Dodajemy zawartość jednej miski do drugiej i dokładnie mieszamy, do połączenia składników. Dwie formy o tych samych wymiarach (u mnie średnia ok. 19 cm) smarujemy masłem i obsypujemy dno i ścianki mąką.
Lightly stir eggs in a bowl with a whisk then add remaining liquid ingredients (eggs, buttermilk, oil and vinegar) and stir together with whisk until blended.
Place all the dry ingredients in another  bowl and stir together really good.
Add wet ingredients to the dry ingredients and stir together with a whisk until completely combined.
Pour the batter into 2 greased and floured cake pans (mine were around 19 cm of diameter).

Bake for about 30 minutes or until a toothpick inserted comes out clean.
After about ten minutes, remove from pans and cool completely on a plate covered with a plastic wrap. Cover in plastic wrap while the cakes cool.
Krem:
Miękkie masło ubijamy chwilę mikserem, dodajemy cukier i serek philadelphia i ubijamy aż do otrzymania jednolitego kremu. Trochę więcej niż 1/3 kremu dajemy pomiędzy dwa blaty, resztą dekorujemy wierzch i boki ciasta.

Frosting:
Beat the soft batter with a mixer then add the cream cheese and the sugar and keep mixing till fluffy. Put around 1/3 of the cream between the two cakes and decorate the top and the side of the cake with the rest.
